avacado harvesting

I have two avacado trees. One is a bacon and the other is a pinkerton. Iwould very much like to know when is the best time to harvest the fruit? Also i would like to know why the bacon drops about eighty percent of it's fruit while it immature? Thank you PS Ilive in SimiValley,Ca.
